Scottish Oatmeal Bannocks

with blue cheese, walnuts and watercress

(Scottish Salad))

Ingredients:
bullet6 oz blue cheese
bullet Scottish Oatmeal Bannocks
bullet2 oz walnut pieces
bullet1 oz watercress, large stalks removed
bullet1 oz Olive oil
bulletSalt and pepper to taste

Prepares 4-6 servings

Directions:
bulletBreak the cheese into small crumbly pieces and divide it between the oatcakes, with the walnut pieces.
bulletToss the watercress pieces with oil and salt and pepper.
bulletArrange the oatcakes on a cookie tin, and broil for about 1 minute, or until the cheese just begins to melt.
bulletTransfer to serving, (salad) plates, pile the tossed watercress on top and serve.
