Scottish Oatmeal Bannocks

(A Kind of Biscuit?)

Ingredients:
bullet6 oz Flour
bullet2 oz medium oatmeal
bullet1 level tsp of salt
bullet1 oz butter
bullet1 tbs baking powder
bullet1/4 pint milk
bullet1 oz sugar

Prepares 4-6 servings

Cook time: 20 minutes

Directions:
bulletStir the flour, salt and baking powder into a bowl.
bulletAdd the butter and rub into a fine consistency.
bulletGently mix in the oatmeal and the sugar.  Make a well in the center.
bulletGradually pour in the milk, stirring the mixture lightly with a wooden spoon until it forms a sticky soft dough.
bulletTurn on to a lightly floured surface, and knead very gently. (Handle as little as possible).
bulletRoll out lightly and shape into one or two 1/2 inch rounds.
bulletHeat a griddle or heavy bottomed frying pan, and sprinkle with a little flour to prevent sticking.
bulletCook for about 10 minutes on one side until brown, then turn and cook on other side.
bulletCool on a wire rack.
