Beer Can Chicken with Sour Cream Biscuits

Ingredients:

 
bullet3 (2-3 Lb.) Whole Chickens
bullet4 12 Oz. Cans of Beer, divided
bullet1 8 Oz. Bottle Italian Dressing
bullet1/4 -1/3 Cup Fajita Seasoning (Recommend Bolner's Fiesta Brand Extra Fancy Seasoning (Walmart))
bulletFresh Rosemary Sprigs

Prepares 12 servings

Preparation time: 30 minutes

Chill Time: 8 Hours

Cook time: 80 Minutes

Directions:

 

bulletPlace Each Chicken in a Large Zip Lock Bag.
bulletCombine 1 can of beer with Italian Dressing and Fajita seasoning.
bulletPour over chickens & chill 8 hours, turning occasionally.
bulletPlace Rosemary sprigs into the other 3 cans of beer.  (1 for each chicken).
bulletPlace chickens onto cans of beer, allowing to stand upright.
bulletLight one side of gas grill, and place chickens on the unlit side.
bulletClose cover & cook for 1 hour and 20 minutes.
bulletCarefully remove cans of beer, and let chicken stand for 10 minutes.
bulletCarve and serve.
bulletServe with Sour Cream Biscuits
