Ingredients:
 | 2 Lbs Carrots |
 | 1/4 Cup of Liquid from Carrots |
 | 2 Tbs Grated Onion |
 | 2 Tbs Horseradish |
 | 1/2 Cup Mayonnaise |
 | 1/2 Tsp Salt |
 | 1/2 Tsp Pepper1/2 Cup Fine Ritz Cracker Crumbs |
 | 2 Tbs Butter |
 | Paprika |
Prepares 8 servings
Preparation time: 25 minutes
Bake time: 15-20 minutes |
Directions:
 | Boil the Carrots until almost tender. Let
Cool. |
 | Slice lengthwise and spread in a shallow 12X8X2 inch
baking dish. |
 | Mix cooking liquid, onion, horseradish, mayonnaise,
salt and pepper and pour over the carrots. |
 | Top with a mixture of cracker crumbs and butter. |
 | Sprinkle top with paprika. |
 | Bake in a 375 degree oven for 15-20 minutes. |
 | (May be made in advance, then baked). |
