Tembleque with Mango Lime Salad

Ingredients:

Tembleque

 
bullet1 Pint of whippin g cream
bullet1/2 Cup Sugar
bullet1/2 Cup cold Milk
bullet1 Packet of Gelatin
bullet1 Tsp lemon, banana or other fruit extract.

Mango-Lime Salad

bullet3 Firm but ripe Mangoes, peeled, cut into 1/4 inch dice.
bullet4 1/2 Tbs. Sugar
bullet3 Tbs fresh Lime Juice
bullet1 1/2 Tbs Dark Rum
bullet1 Tbs Grated Lime Peel

Prepares  4 Servings

Preparation time: 10 minutes

Refrigeration Time:  Until set

Salad Dressing: 30 Minutes at room temp.

Directions:

bulletBring cream and sugar to a boil in a medium saucepan.
bulletReduce heat and simmer 5 minutes.
bulletCombine milk and gelatin in a small bowl, and let sit 1 minute.
bulletRemove cream mixture from heat, combine with milk, gelatin and fruit extract.
bulletPour mixture into molds.
bulletRefrigerate until set. 
bulletUnmold onto serving plates.
bulletTop with Mango-Lime Salad.

Mango- Lime Salad

bulletMix all ingredients in a small bowl. 
bulletLet stand 30 minutes tossing occasionally.
bulletServe chilled or at room temperature.
