Ingredients: Tembleque
 | 1 Pint of whippin g cream |
 | 1/2 Cup Sugar |
 | 1/2 Cup cold Milk |
 | 1 Packet of Gelatin |
 | 1 Tsp lemon, banana or other fruit extract. |
Mango-Lime Salad
 | 3 Firm but ripe Mangoes, peeled, cut into 1/4 inch
dice. |
 | 4 1/2 Tbs. Sugar |
 | 3 Tbs fresh Lime Juice |
 | 1 1/2 Tbs Dark Rum |
 | 1 Tbs Grated Lime Peel |
Prepares 4 Servings
Preparation time: 10 minutes
Refrigeration Time: Until set
Salad Dressing: 30 Minutes at room temp. |
Directions:
Temblique
 | Bring cream and sugar to a boil in a medium
saucepan. |
 | Reduce heat and simmer 5 minutes. |
 | Combine milk and gelatin in a small bowl, and let
sit 1 minute. |
 | Remove cream mixture from heat, combine with milk,
gelatin and fruit extract. |
 | Pour mixture into molds. |
 | Refrigerate until set. |
 | Unmold onto serving plates. |
 | Top with Mango-Lime Salad. |
Mango- Lime Salad
 | Mix all ingredients in a small bowl.

 | Let stand 30 minutes tossing occasionally. |
 | Serve chilled or at room temperature. |
