(Potato Dish)

Ingredients:
bullet3 tbs vegetable oil of fat drippings
bullet1 medium onion, sliced
bullet1 1/2 lbs potatoes
bulletSalt & pepper to taste
bullet2 oz grated cheese

Prepares 4-6 servings

Prep time:  Unknown

Cook time: 1 hour and 20 minutes

Directions:
bullet Put the oil in a heavy bottomed saucepan and fry the onion gently for 2 to 3 minutes.
bulletPeel the potatoes, slice thickly and add to the pan with a little salt and pepper.
bulletCover and cook very gently for about an hour until the potatoes are cooked through.
bulletRemove from the heat.
bulletStir the mixture of onions and potatoes then pile on to a warm serving dish.
bulletSprinkle the mixture with cheese and brown under broiler.
