Spinach Puffs

Ingredients:
bullet6 Eggs
bullet3/4 Cup melted butter
bullet2 10 Oz packages frozen spinach, thawed and drained
bullet1 Tsp Pepper
bullet2 Cups Seasoned Stuffing Mix
bullet1/2 Cup Grated Parmesan Cheese

Mustard Sauce:
bullet1/3 Cup Dry Mustard
bullet1/2 Cup Wine Vinegar
bullet1/4 Cup Sugar
bullet1 Egg Yolk

Prepares 12 to 16 Servings

Preparation time: 40 minutes (Puff Balls)

                            35 minutes (Mustard Sauce)

Chill /Freeze Time: 4 Hours ? (Puff Balls)

                               1 Hour (Mustard Sauce)

Cook time: 25 minutes (Puff Balls)

                  30 minutes (Mustard Sauce)

 

Directions:

Spinach Balls

bulletBeat Eggs and add butter.  Add remaining ingredients and mix well.
bulletForm balls and flash freeze on a cookie sheet.  Store in plastic bags.
bulletTo serve, bake frozen balls 25 minutes at 350 degrees.

Mustard Sauce:

bulletCombine mustard and vinegar and let stand 4 hours.
bulletCombine sugar and egg yolk, mix.  Add to mustard-vinegar mixture and cook until slightly thickened.  Chill.
bulletServe at room temperature with the puffs.
