Queen Mary's Tart

(Scottish Dessert)

Ingredients:
bullet8 oz puff pastry oranges
bullet2 tbs jam.  (Baker's choice)
bullet2 oz sugar
bullet2 oz butter
bullet2 pz chopped citrus peel
bullet1 tbs sultanas
bullet2 eggs, beaten

Directions:

Set oven to 425 degrees.

Roll out pastry on a floured surface and line a 7 inch greased dish.

Spread the jam over the pastry dish.

bullet

Also spread the jam over the pastry base.

Melt the sugar and butter in a saucepan over a very gentle heat.

Add the mixed citrus peel and sultanas.

bullet

Remove from the heat and mix in the beaten eggs.  (Be sure to temper the eggs

Pour the mixture into the pastry case.

Bake fo 20-25 minutes until the filling is set and golden brown.

Serve hot or cold with whipped cream.
