Ingredients:
 | 4 Lb. Pork Loin |
 | 2 Tbs. Fat |
 | Caraway Seed |
 | Salt & Pepper to taste |
 | 1 Onion, quartered |
 | 1/4 Cup Water |
Prepares 8 Servings
Preparation time: 5 minutes
Roast time: 2 hours |
Directions:
 | Rub roast with salt, pepper & caraway seed.

 | Put fat in bottom of roasting pan; add roast, fat
side up, quartered onion & water. |
 | Bake uncovered at 350 F until it starts to turn
brown. (Do not let juices burn). |
 | Add 1 cup of water, cover & roast at 325 F until
almost done. |
 | Baste & uncover to finish until tender.

 | Remove from oven; cover to rest & finish cooking.
|
 | Slice & serve with
Tomato Gravy
or use pan juices to make gravy. |
