Pork Loin Roast

Ingredients:

 
bullet4 Lb. Pork Loin
bullet2 Tbs. Fat
bulletCaraway Seed
bulletSalt & Pepper to taste
bullet1 Onion, quartered
bullet1/4 Cup Water

 

Prepares 8 Servings

Preparation time: 5 minutes

Roast time: 2 hours

Directions:

 

bulletRub roast with salt, pepper & caraway seed.
bulletPut fat in bottom of roasting pan; add roast, fat side up, quartered onion & water.
bulletBake uncovered at 350 F until it starts to turn brown. (Do not let juices burn).
bulletAdd 1 cup of water, cover & roast at 325 F until almost done.
bulletBaste & uncover to finish until tender.
bulletRemove from oven; cover to rest & finish cooking.
bulletSlice & serve with Tomato Gravy or use pan juices to make gravy.
