Konigsburg Meatballs

Ingredients:
bullet1 Lb ground beef & ground pork mixed
bullet1/2 cup of dry bread crumbs
bullet1/2 cup milk
bullet1 small onion, (finely chopped)
bullet2 Tbs butter
bullet1 large egg
bullet1 Tsp grated lemon rind
bulletSalt & pepper to taste

Sauce:
bullet1 Cup beef stock
bullet2 Tbs lemon juice
bullet3 Finely chopped anchovies
bullet1 Tsp capers
bullet2 Tbs flour, (mixed with 1/2 cup of water)

Directions:

     Meatballs:

bulletSoak the breadcrumbs in milk for 10 minutes, and saute the onions in 1 Tbs of butter until transparent.
bulletMix together all ingredients in a bowl and work until well blended.
bulletShape into 1" meatballs.
bulletBrown slightly in butter, shaking the pan to keep the meatballs round and evenly brown.

     Sauce:

bulletMix together stock, lemon juice, chopped anchovies and capers and bring to a boil.
bulletAdd flour and water and cook until thickened, (about 5 minutes).
bulletPour over meatballs and simmer together for 10 minutes.
