Green Beans w/Pecans, Lemon & Parsley

Ingredients:
bullet2 Lbs Green Beans, trimmed, halved crosswise
bullet5 Tbs. Butter
bullet3/4 Cup Chopped Pecans
bullet4 Tsp. Minced Lemon Peel
bullet1/3 Cup Finely Chopped fresh Italian Parsley

Prepares 8 Servings

Preparation Time: 30 minutes

Cook time: 15-20 minutes

 

Directions:
bulletCook beans in a large por of boiling slated water until just tender.
bulletDrain, and transfer to a bowl of water and cool.  Drain and pat dry.  (May be prepared a day ahead of time, cover and refrigerate).
bulletMelt butter in a large deep skillet over medium heat.  Add pecansand saute until nuts are crisp and butter is lightly browned. (3 Minutes)
bulletAdd beans; toss to heat through.  (5 Minutes)
bulletMix in lemon peel and cook for 1 minute.
bulletMix in parsley, season with salt and pepper.  Serve.
