Green Bean & Shellfish Succotash with Grilled Corn

Ingredients:
bullet1 Lb Green Beans
bullet3/4 Cup Butter Beans
bulletKosher Salt
bullet1/2 Cup Tomato Concasse
bullet2 Tbs Olive Oil
bullet1 Small Red Onion, julienned
bullet1 Red Pepper, cut into small dice
bullet1 Yellow Pepper, cut into small dice
bullet1 Tsp Garlic, minced
bullet1 Cup Grilled Corn
bullet2 Cups of Shellfish Stock
bullet2 Tbs Green Onions, minced

Prepares 6 servings

Preparation time: Unknown

Cook time: 30 Minutes

Directions:
bulletBlanch the green beans for about 4 minutes in a large pot of boiling water.
bulletRemove to an ice-water bath and set aside.
bulletCook the butter beans in a small amount of slated water until tender, about 15 minutes.
bulletIn a medium sauce pan, heat the oil and saute onion, peppers and garlic.
bulletAdd the reserved green beans, butter beans and corn and saute for another 3 minutes.
bulletAdd the shellfish stock and tomatoes and cook another2 minutes.  Season with salt and pepper to taste and garnish with the green onions.
