Ingredients:
 | 2 large cucumbers |
 | 1 large Bermuda onion |
 | 2 Tbs cider vinegar |
 | 1 Tbs sugar |
 | 1/2 Tsp salt |
 | 1/4 Tsp pepper |
 | 3/4 cup sour cream |
 | 2 Tbs minced fresh parsley |

Directions:
 | Peel cucumbers and cut into very thin slices. |
 | Same with onion, not diced, but thinly sliced and
halved or quartered. |
 | Mix the vinegar, sugar, salt, and pepper and pour
over the cucumbers and onions. Marinate about 30 minutes. |
 | Drain off the liquid and toss the cucumbers and
onion with the sour cream. |
 | Top with fresh parsley and serve. |
