Chilled Cucumber Soup with Creme Fraiche

Ingredients:

Cucumber Soup
bullet3 Cucumbers, washed, seeded, half peeled, half not peeled
bullet1 Tbs Giner, peeled and diced
bullet1 Tbs Shallots, peeled and diced
bullet1 1/2 Tbs freshly squeezed lime juice
bulletSea Salt & White Pepper to taste

Creme Fraiche (May be purchased at Harry's)
bullet2 Cups Creme Fraiche
bullet1 Tbs Honey
bullet1 Tbs freshly squeezed Lime Juice
bulletSea Salt & White Pepper to taste

Garnish
bullet1 Tbs Mint, chiffonade
bullet1 Tbs Cilantro, chiffonade
bullet1 Tbs Red Pepper, brunoise

Prepares 6 servings

Cook time: 0 Minutes

Directions:

Cucumber Soup

bulletPuree all ingredients, taste for seasoning and adjust as necessary.
bulletPass through a fine mesh strainer and set aside.

Creme Fraiche

bulletMix all ingredients together and blend well.
bulletSet aside.

Garnish - Combine all ingredients.

Serving

bulletLadle approximately 6 Ozs of cucumber soup into each bowl.
bulletTop with a teaspoon of creme fraiche.
bulletGarnish with a pinch of the garnish combination.
