Soup
 | 3 Cucumbers, washed, seeded, half peeled, half not
peeled |
 | 1 Tbs Giner, peeled and diced |
 | 1 Tbs Shallots, peeled and diced |
 | 1 1/2 Tbs freshly squeezed lime juice |
 | Sea Salt & White Pepper to taste |
Creme Fraiche (May be purchased at Harry's)
 | 2 Cups Creme Fraiche |
 | 1 Tbs Honey |
 | 1 Tbs freshly squeezed Lime Juice |
 | Sea Salt & White Pepper to taste |
Garnish
 | 1 Tbs Mint, chiffonade |
 | 1 Tbs Cilantro, chiffonade |
 | 1 Tbs Red Pepper, brunoise |

Directions:
Cucumber Soup
 | Puree all ingredients, taste for
seasoning and adjust as necessary. |
 | Pass through a fine mesh strainer
and set aside. |
Creme Fraiche
 | Mix all ingredients together and
blend well. |
 | Set aside. |
Garnish - Combine all ingredients.
Serving
 | Ladle approximately 6 Ozs of
cucumber soup into each bowl. |
 | Top with a teaspoon of creme
fraiche. |
 | Garnish with a pinch of the
garnish combination. |
