Collops of Beef

(Scottish Beef Entree)

Ingredients:
bullet1 1/2 lb of braising steak, (sliced into 4 pieces)
bullet1 onion, chopped
bullet6 oz sliced mushrooms
bullet2 tbs flour
bullet2 oz butter
bulletSalt and freshly ground pepper to taste
bulletBayleaf (optional)
bullet3/4 pint of beef stock

Prepares 4 servings

Directions:
bulletSet the oven at 350 degrees F. 
bulletMix the flour with the salt and pepper.
bulletCoat the beef slices with seasoned flour.
bulletMelt the butter in a frying pan. 
bulletFry the collops for about 2 minutes on each side.
bulletRemove from the pan and set aside.
bulletGently fry the onion and mushrooms.
bulletPut the onions, mushrooms and bayleaf into a casserole. 
bulletLay the collops on top.
bulletPour in the stock, cover and cook for 1 1/2 hours.
