 | 2 Lbs Fresh Spinach |
 | 4 Oranges, peeled and sectioned |
 | 1 Large purple onion, thinly sliced and separated
into rings |
 | 3 Oz. Goat cheese, crumbled |
 | 1 Cup sweetened dried cranberries |
 | 1/2 Cup chopped pecans, roasted |
Hot Citrus Dressing Ingredients
 | 1 (6 Oz) can frozen orange juice concentrate, thawed |
 | 1 small onion, diced |
 | 1/3 Cup red wine vinegar |
 | 1 Cup firmly packed brown sugar |
 | 1 Tbs grated orange rind |
 | 1 Tsp dry mustard |
 | 1 Tsp salt |
 | 1 Tsp hot sauce |
 | 1 Cup Peanut oil |

Directions:
Salad Preparation
 | Remove stems from spinach, wash leaves thoroughly,
and pat dry. |
 | Arrange spinach, oranges, onion, goat cheese,
cranberries and chopped pecans on 8 salad plates. |
Hot Citrus Dressing Preparation
 | Process orange juice, onion & vinegar in a blender
until smooth. |
 | Add brown sugar, grated orange, mustard, salt & hot
sauce, processing until smooth. |
 | Turn blender on high, add peanut oil in a slow
steady stream. |
 | Bring mixture to a boil, in a medium size
non-aluminum sauce pan. |
 | Cook over medium heat for 10 minutes. |
