Spinach Salad with Hot Citrus Dressing

Ingredients:
bullet2 Lbs Fresh Spinach
bullet4 Oranges, peeled and sectioned
bullet1 Large purple onion, thinly sliced and separated into rings
bullet3 Oz. Goat cheese, crumbled
bullet1 Cup sweetened dried cranberries
bullet1/2 Cup chopped pecans, roasted

Hot Citrus Dressing Ingredients

bullet1 (6 Oz) can frozen orange juice concentrate, thawed
bullet1 small onion, diced
bullet1/3 Cup red wine vinegar
bullet1 Cup firmly packed brown sugar
bullet1 Tbs grated orange rind
bullet1 Tsp dry mustard
bullet1 Tsp salt
bullet1 Tsp hot sauce
bullet1 Cup Peanut oil

Prepares 8 Servings

Preparation time: 20 minutes

Cook time: 10-12 minutes

Directions:

Salad Preparation

bulletRemove stems from spinach, wash leaves thoroughly, and pat dry.
bulletArrange spinach, oranges, onion, goat cheese, cranberries and chopped pecans on 8 salad plates.

Hot Citrus Dressing Preparation

bulletProcess orange juice, onion & vinegar in a blender until smooth.
bulletAdd brown sugar, grated orange, mustard, salt & hot sauce, processing until smooth.
bulletTurn blender on high, add peanut oil in a slow steady stream.
bulletBring mixture to a boil, in a medium size non-aluminum sauce pan.
bulletCook over medium heat for 10 minutes.
