Chocolate Creme De Menthe Cake

Ingredients:

Cake:
bullet2 Cups Sugar
bullet1 Cup Room Temperature Butter
bullet8 Eggs
bullet2 Cups Flour
bullet1 Tsp Salt
bullet2 Tsp Vanilla
bullet2 (16 Oz.) Hershey Chocolate Syrup (2 Cans work well)

Creme De Menthe Filling:
bullet4 Cups 10 X Sugar
bullet4 Tsp. Creme Dem Menthe
bullet2 Cups soft Butter

Glaze:

12 Oz. Semi Sweet Chips

1 1/2 Sticks of Butter

Prepares 16 - 24 Slices Servings

Preparation Time: 30 minutes

Cook time: 30 minutes

Chill Time:  2 Hours

 

Directions:

Cake:

bulletCream sugar and butter.
bulletAdd eggs one at a time.
bulletSift in flour and salt.
bulletAdd and mix in vanilla and chocolate syrup.
bulletLine 2 13+9 with parchment paper, spray paper with cooking spray.
bulletDivide batter into these two pans and bake at 350 degrees for 30 minutes.  Cool well.

Creme De Menthe Filling:

bulletMix ingredients well, and put half of filling on top of first layer of cake.
bulletAdd second layer, and top with last half of filling.
bulletCool in Refrigerator until well chilled.

Glaze:

bulletMelt chips and butter in top of double boiler.
bulletPour over top of cake and let drip down sides.
bulletChill well.

Cut cake lengthwise, and slice each side into 8 to 12 slices.  Cake is very rich and goes well with Mint Chocolate Chip ice cream.
