Ingredients:
 | 1 Small head of red cabbage, (about 2 Lbs) |
 | 2 Slices of diced bacon, (may substitute 2 Tbs of
butter or oil) |
 | 3 Tbs finely chopped onions |
 | 1 Large green apple, (peeled, cored and cut into
matchsticks |
 | 3 Tbs of red wine vinegar |
 | 2 Tbs honey |
 | 1/8 Tsp caraway seeds |
 | 1/4 - 1/3 Tsp salt |

Directions:
 | Quarter, core and thinly slice the red cabbage. |
 | Briefly immerse in a bowl of cold water |
 | In a Dutch oven, cook the bacon until the fat is
rendered. |
 | Add the onion and cook over medium/low heat until
golden. |
 | At this point, remove the cabbage from the water,
and add it to the pan along with the apple, vinegar, honey, caraway seeds
and salt. |
 | Cover the pan, and cook on medium/low heat until the
cabbage is very soft. (Approx. 1-1 1/2 hours)
Add boiling water if it appears needed during
cooking. |
