Braised Red Cabbage & Apples

Ingredients:
bullet1 Small head of red cabbage, (about 2 Lbs)
bullet2 Slices of diced bacon, (may substitute 2 Tbs of butter or oil)
bullet3 Tbs finely chopped onions
bullet1 Large green apple, (peeled, cored and cut into matchsticks
bullet3 Tbs of red wine vinegar
bullet2 Tbs honey
bullet1/8 Tsp caraway seeds
bullet1/4 - 1/3 Tsp salt

Prepares 4 servings

Preparation time: Not known

Cook time: 1-2 Hours

Directions:
bulletQuarter, core and thinly slice the red cabbage.
bulletBriefly immerse in a bowl of cold water
bulletIn a Dutch oven, cook the bacon until the fat is rendered.
bulletAdd the onion and cook over medium/low heat until golden.
bulletAt this point, remove the cabbage from the water, and add it to the pan along with the apple, vinegar, honey, caraway seeds and salt.
bulletCover the pan, and cook on medium/low heat until the cabbage is very soft.  (Approx. 1-1 1/2 hours)  Add boiling water if it appears needed during cooking.
